Just because you’re vegan doesn’t mean you can’t have braised savory like others. There are many substitutes you can use in place of meat, such as bean and tofu ( in so many different shapes and sizes). For this recipe, I will use soya paste and other green ingredients of this season such as okra and eggplant


  • 2 large eggplants, chop into serving size
  • 200gr of okras, chop into serving size
  • 200ml of vegan stock
  • Fried cube tofu, other types of bean curd as optional
  • Your choice of mushroom
  • The paste: 1 teaspoon soybean paste mixed well with 1 pieces of fermented bean curd
  • Leek, finely chopped lemongrass + red chilies, 1 whole lemongrass


  • Over high heat, saute leeks until fragrant then add chopped lemongrass + red chilies
  • Add mushroom, tofu, okra, and eggplant. Stir well before continuing with the paste. Season with a bit of sugar if necessary
  • Add vegan stock + whole lemongrass, simmer for 5-10mins. Season to taste again if necessary
