Right, so after a while, I am now a fulltime vegan. I gave up on cooking poultry for some reasons, but changing into a fulltime vegan wasnt that difficult to me. I replace meat with plenty of tofu, bean and still feel healthy 🙂

Here will be just another recipe of my vegan journey

INGREDIENTS:

  • 200ml of vegan stock
  • 100gr of shredded dried coconut meat
  • Fried cube tofu
  • Your choice of mushroom
  • 2 big carrot. Peeled and cut into pieces
  • 3 potatoes.  Peeled and cut into pieces
  • 2 curry leaves, 1 small star anise, 1 small piece of cinnamon, chopped leeks

COOKING STEPS:

  • Making coconut milk: Put dried coconut meat into a large bowl, pour first 200ml of hot water in, give it a gentle stir for 1-2mins, then take off the meat with your hand, remember to squeeze them a bit so you get the best out of the first milk. Continue with another 200ml of hot water, this is the second milk.
  • Over a med heat cooking pan, saute leek, bring to fragrant, then add carrot first, then mushroom. Stir well
  • Add your first coconut milk in, simmer down for 1-2mins before adding vegan stock and the second coconut milk + curry leaves + cinnamon + star anise
  • Bring to boil then add tofu and carrot. Season to taste
  • Serve hot with bread, noodle, or rice. Adding a few basil leaves as garnish
