Pasta, fresh mushroom, chicken, spinach – ain’t these ingredients get most of the action when it comes to adding extra cream and cheese to just a simple pasta dish? But why stop there? Try making 2 dishes at the same time with these recipes – as what I did today to indulge myself with just chicken for my diet and still please my bf with his cheesy pasta dish !

INGREDIENTS for the pasta dish:

–         250gr of your favorite pasta, uncooked

–         250gr of button mushroom, washed and quartered

–         1 tbsp of olive oil

–         1½ cups of extra thick cream

–         1½ cups of milk

–         1½ cups of chicken broth / vege broth

–          ½ cups of grated Parmesan cheese

–          ½ cups of unsalted butter

–         Salt, to taste

–         Mixed Italian herbs (Oregano, basil, thyme, marjoram, sage, parsley, bay leaves and cracked black pepper)

HOW TO MAKE

–        Add all above ingredients together into a large wide pot, apart from some cheese  for thicken at the end and garnish – what make this dish tastes so good is the uncooked pasta, to be cooked with the rest of your ingredients

–        Bring to a boil, and then simmer with lower heat until the mixture thicken and with lid only partially on

–       Stir a few times to mix then boil for about 10 minutes

–       Add in cheese and stir until melted.

–       Season to salt & pepper. Taste it. Garnish with some extra cheese on top

INGREDIENTS for the chicken dish:

–         2 pieces of chicken thigh

–         100gr of spinach

–         2 tbsp of teriyaki sauce

–         2 tbsp of soya sauce

–         1 tbsp of oyster sauce

–          ½ tbsp of sesame

–          ½ cups of unsalted butter

–         Sugar, salt, to taste

–         Sesame oil

HOW TO MAKE

–        Marinate the chicken with teryiaki sauce + soya sauce + oyster sauce + 1/2 tbsp of sugar + sesame seed. Leave it rest for 30mins min

–        Over high heat, add 1/2 tbsp of sesame oil and the spinach + 1/4 tbsp of salt. Taste it

–        In a small saucepan over high heat, quickly seal 2 sides of the chicken thigh first

–        Once it turns to desired brown color, pour in the remaining sauce and simmer until thicken

–        Serve hot with your sauteed spinach
